The address wins when customers come to you
If customers visit you on site, the address has to be visible. Hiding it cuts you off from "near me" intent and from navigation. local ranking factors.

A service area wins when you travel
A plumber, an electrician or a mobile stylist should define an area and hide the address. Google requires it for businesses without a service counter, and visibility then spreads across the area.
What an area does not solve
Declaring half a region will not make you appear across all of it. Distance from the searcher stays a ranking factor no matter what area you declare.
A service area says where you will travel. It does not tell Google where to show you.
